Zucchini Bread



*I love this recipe! I got it from my sister in law and it's really yummy! I love to put chocolate chips in mine to add even more sweetness. What can I say? I'm a choco-holic!!


You'll need:

-1 cup sugar

-1 cup brown sugar

-1 cup oil

-3 eggs

-2 tsp. cinnamon

-1/4 tsp. baking powder

-1 tsp. baking soda

-1 tsp. salt

-2 gated zucchini(not peeled)

-3 cups flour

-1 cup choc. chips(if desired)


DIRECTIONS:

-Preheat oven to 325 degrees farenheit.

-Mix sugars, oil, eggs and cinnamon together.

-Then add flour, powder, soda, and salt.

-Then add zucchini and choc. chips!

-Pour into greased loave pans (makes 2 loaves)

-Bake for 1 hour and enjoy!!

Speedy Strawberry Swirl Triffle


*This was supposed to be a cake, but when I baked the cake according to the directions.......the strawberry part didn't rise and cooked funny so I cut the cake into cubes and made a triffle out of it!!
You'll Need:
-1 white/yellow or chocolate cake mix
-1 (4 serving) strawberry flavored gelatin mix (don't need this if you are using choc. cake)
-1 (8 oz.) tub of cool whip-low fat
-2/3 cup of sour cream
-2/3 cup of powdered sugar
-1 1/2 cups of sliced strawberries
DIRECTIONS:
-Preheat oven to 350 degrees farenheit
-Prepare cake mix as directed
-Put half of cake mix into another bowl and add the jello mix, stir it in gently
-Grease 2 (9") cake pans and pour half of the plain cake mix and half of the strawberry cake mix into pan.
-using a teaspoon or regular cereal spoon, gently swirl the two together (be careful not to over swirl it or the cake will be all pink when it comes out).
-Bake cakes for 30 min. then let them cool for 30 min in the pan. Don't worry the strawberry par of the cake won't rise like the yellow will, that's why this is a triffle! No one will know it didn't rise!)
-After cake is cooled cut into cubes and layer in a triffle dish with sliced strawberries, and the fluffy filling. Enjoy!!
FLUFFY FILLING:
-Mix 2/3 cup of sour cream with 2/3 cup of powdered sugar. Mix gently or it will be really really thin!
-Then gently fold in the 8 oz. tub of cool whip.
~You can store the leftover triffle in the refridgerator but I doubt there will be any left over!!

Quick homemade Oreos

*This recipe is so fast and easy that it's the one thing I can whip out in a half hour! What cookie only takes a half hour to mix, bake and assemble? Only this one! I'm addicted to homemade Oreo's! I shouldn't make them because I eat them all!

You'll need:
-2 devil's food cake mixes
-1 cup oil
-3 eggs
-1/2 cup flour

DIRECTIONS:
-Mix all ingredients together.
-Place small cookie balls (a tablespoon measuring spoon works great!) on a cookie sheet. This recipe makes tons!
- Cook for 10 minutes at 350 degrees farenheit. They will be a little gooey but they will cook a little on the pan when you take them out. If you want them a little more crunchy then cook them only 1 or 2 minutes longer otherwise you will break your teeth trying to bite into them!

FROSTING:
*This is my own version of cream cheese frosting. Don't eat a lot or don't eat it at all if you are trying to lose weight! It is so fattening but SOOO YUMO!! To cut down on fat alittle use a low fat or no fat cream cheese.

-1 package no fat cream cheese, softened
-1/4 cup low fat milk
-1 bag of powdered sugar
-pinch of salt
-1/2 tsp. vanilla

*blend all together until a thick creamy consistency. If it's not thick enough add a little more powdered sugar. If it's too thick, then add a LITTLE more milk until you have reached your desired consistency.
~This frosting recipe makes a ton! It will last in the fridge for a long (about a month or more-no kidding) if you don't use it all with the oreos!
