I LOVE this recipe!! It is super easy and is a huge crowd pleaser! I also received a request to post what I serve along with the main dishes. This chicken I grilled new potatoes in a foil packet with garlic salt, and olive oil, then when they were done, I added parmesan cheese. Also a salad went with this. I hope that helps! I never thought of adding that. Sorry guys! :o)
-1 bottle of Kraft Sundried tomato salad dressing
-8 Boneless/skinless chicken breasts
-3 medium tomatoes, sliced
-2 tsp. dried basil/ or fresh if you have it
-1 cup mozzarella cheese
-Take chicken breasts and marinate in 3-4 tbs. of the sundried tomato dressing for at least 10 min. If possible for 20-30. (The longer it marinates the more flavor the chicken will have)
-While chicken is marinating preheat grill to medium heat (or you can use a grill pan).
-Slice tomatoes and combine with the basil, 1 tbs. of sundried tomato dressing and cheese.
-Cook chicken and then spoon tomato mixture on top of chicken letting the cheese melt. Serve immediately.
