Spanish Rice

*So easy to throw together. Spring cleaning has taken over my house this week and this meal was so easy to throw in the crock pot and let sit while I cleaned instead of slaving over a hot stove ;) after being tired from cleaning all day. Plus it was pretty good. I had about 1/2 of it left over after all three of us had heaping servings. So I froze it. Another easy meal for later. :)

-1 tsp. salt
-1 1/2 cups rice=$.75
TOTAL=$1.75 ($3.75 including beef)

Pulled Chicken Sliders

-Got this recipe from 5dollardinners and it couldn't have been any easier to make. I think I would have added some honey or more brown sugar, it seemed just a tiny bit acidic, but it was still really good and made for some awesome leftovers! You can't beat a crockpot meal, easy to make, easy to clean up and you don't have to slave over a hot stove for an hour! Plus this meal is SO CHEAP!! And since we are a family of 3 we had tons of leftovers too!

YOU'LL NEED:

3 chicken breasts ($2.53) About 1.3 lbs, bought on sale for $1.89/lb.
1/2 onion, chopped ($.15)
2 garlic cloves, crushed ($.10)
6 oz. can tomato paste ($.35)
1 Tbsp cider vinegar ($.05)
3 Tbsp prepared mustard ($.10)
3 Tbsp brown sugar ($.10)
Bread ($.60) I used rolls

TOTAL= $3.98

Directions:
-Combine all in crockpot cook for 4 hours on low or 2 on high. Shred chicken, put back in sauce.
-Let chicken sit for about 15 min. or you can serve right away if you need to, it is just more juicy if you wait.
-Put on top of rolls.
-Yum!!
