Cheesy Chicken Rice Skillet


This one came out of the Kraft foods recipes, but I made some adjustments because I either lacked the right ingredients, or I just thought it needed something else. This was a one pan dish which equals less dishes which equals a happy me! This was quick and still ever so yummy!
*and fyi, it tastes even better with more cheese! Can't ever go wrong with more cheese. :)

You'll Need:
-2 chicken breasts $1.50
-1/4 c. Zesty Italian salad dressing $.25
-1 1/2 c. instant rice $.75
-1 pkg. frozen broccoli $1.00
-1 can rotel (or 1 c. diced tomatoes) $.85
-1/4 c. roasted red peppers $.75
-1 can chicken broth $.50
-1/2 c. cheese $.50 (bought on sale for $1 for 1 c.)
-1/4 c. minced onions (or green onions) $free from garden
-Salt & pepper to taste

TOTAL= $6.10 (on the more expensive side, but still, can't beat that, still lots cheaper than eating out)


DIRECTIONS:
-Heat italian dressing in skillet. Add sliced chicken to the dressing. Saute for 3 min.
-Add rice and broth. Reduce heat to simmer, and let the rice cook for about 5 min. or until cooked through and chicken is done.
-Add in broccoli, onions, peppers, and salt and pepper.
-Saute another 5 min. until broccoli is tender crisp.
-Add cheese and serve!
-Enjoy!

Chicken Crescent Rolls


You'll Need:
-3 small chicken breasts=$1.00
-1-8oz. cream cheese=$.99
-1 c. sour cream=$.91
-1 small onion=free from garden
-1 can olives=$.88
-3 cans pillsbury crescent rolls=$4.01 (bought with coupon & on sale)
-1 can cream of chicken soup=$1.00
-2 tbs. butter=$.02
-1 c. milk=$.10
-few saltine crackers
-Salt & Pepper
*You can also add mushrooms as well or whatever you want. But I'm not a mushroom fan so I nixed those. :)
*total=$8.91 (this is doubled because I freeze 1/2. So this is really $4.45 for 4 people)
DIRECTIONS:
-First boil you chicken in water till cooked through. Cube it. Set aside.
-Dice olives and onions (can add mushrooms too if you want). Set aside.
-In a saucepan melt, cream cheese & sour cream. Add olives, onion and chicken (mushrooms).
-Melt butter in a bowl in microwave.
-Open cans of crescent rolls and set out on cookie sheets.
-Spoon about a tablespoon of the cream cheese filling into an idividual crescent roll triangle.
-Fold the crescent roll around the filling so no filling leaks out.
-After filling all rolls, baste the tops with the melted butter.
-Sprinkle crushed saltine crackers on top of rolls.
-Bake at 350 for about 20 min or until golden brown.
-While rolls are baking, combine cream of chicken soup & milk in saucepan. Cook until heated through.
-Serve sauce on top of rolls.
*I served this with fresh garden green beans.

Taco Rice Casserole

*This recipe would also be Gluten-Free.
This recipe is a fun, easy way to please all members of your family. Plus, it's quick, which you know by now is totally my style. :) And another bonus is, it makes a TON so you can freeze half and still have some leftover to put in your fridge as well after you're done eating. It literally feeds an army, and is cheap to make. All good things!

You'll Need:
-1 lb. hamburger $free-we did a beef last year, already paid for
-1/2 onion $free from garden, yes I still have onions, sweet!
-1 bottle or big can of stewed tomatoes $free from garden
-1 bag of frozen corn (defrost in microwave) $free from garden
-1 packet of taco seasoning $.50
-1 can of tomato soup $.60
-3 cups of cooked rice $.50
-1 cup shredded cheese, I like cheddar but you can use what you have $.99 (bought on sale)
-Salt and Pepper to taste

Total: $2.59 (this is for two meals, so really tonight's meal was $1.29-love it!)

DIRECTIONS:
-Preheat oven to 350.
-Brown hamburger with onion in a skillet.
-Add taco seasoning to hamburger once it's cooked.
-Add can of tomato soup into the hamburger.
-Add rice and cheese to hamburger mixture. Stir together well.
-Then add corn, and tomatoes.
-Stir everything really well then put it in a 9x13 pan. It will be filled clear to the top. (sometimes I mix everything in the 9x13 pan and it works out too.)
-Top with cheese and bake for 20-30 min. until everything is nice and bubbly.
-Serve up and enjoy. I usually just top it with some S&P for more taste. Total time to get this baby done is about 45 min. You can also make this the night before and then set your stove to come on 1/2 hr. before you come home and then your house will smell nice, or you can have it made the night before and leave it in your fridge, then pop it in, dinner in 30 min. Can't beat that!
*I've also brought this dish to funeral dinners when asked to bring something, it's been a big hit. Kids will even eat it. ;)
